During our search for transparent, healthy and sustainable food, we have always overlooked eggs. We always seem to come back to the intrinsic values of eggs, nutritionally as well as the impact eggs can have on the transition towards a more sustainable consumption of animal protein.
Egg is a source of new live and when we use eggs as a basic ingredient for meat substitutes we simultaneously contribute to a better world. After all, when it comes to sustainability, eggs are known for equalling plant-based meat substitutes, due to their low CO2 footprint.
